E and A make a Thank You Dish

In spite of feeling under the weather it’s been a fun day!  We walked over to the farmers’ market this morning, just to take a walk, and shared a cup of hot cider.

Look at how fun.

Then we hightailed it over to the theatre to watch Zach and Miri Make a Porno.  I love Seth Rogan, Elizabeth Banks, and director Kevin Smith, but this was only good, not great.  I’m pretty much a boy, so I thought it was too much touchy-feely not enough comedy.  I got a cheddar cheese and dill scone from a muffin shop next-door to eat during the movie.

When I got home I snacked on a lowfat mocha latte yogurt with 6 chocolate chips for fun.

When I got home from Miami last weekend I received a fun gift box from Pom with a bunch of single serving juices!  Here is A showing his appreciation with one. (he is really a cutie, we’re not sure why he photographs so funny!)

So tonight I put together a few recipes I’ve seen and made some Thank You Pom Chicken.  Since I haven’t been to the gym in about a month I was glad to see that A 2005 study published in the American Journal of Cardiology showed improved blood flow to the heart in patients drinking 8oz. daily of POM Wonderful 100% Pomegranate Juice for 3 months.

Super easy recipe if you’re willing to stand in the kitchen for a little bit

  • put 2 defrosted chicken breasts in a 425* oven
  • meanwhile, in a small saucepan heat 1tsp PromiseActiv (or butter, Smart Balance, whatever), 2C Pom pomegranate juice, 1C orange juice, and 1tsp parsley and until reduced to a 1/2C
  • continue to cook the chicken until 35minutes are up, spooning the Pom glaze over-top every 5 minutes
  • let the chicken rest for 5 minutes and serve (and store) topped with the remaining sauce.


I served my piece alongside some roasted Brussels sprouts and zucchini (with a little chili powder).

My eyes were bigger than my (sick) stomach though, I only ate 3 bites of the chicken and about 2/3 of the veggies.

A is at volunteering, so I’m planning on heading down to Starbucks to work on my grading.  I’m sure I’ll have a snack so I’ll be back with an update later.

*****Updated to add – I think I more than made up for my half dinner!  I didn’t get started grading until pretty late unfortunatly, when I was almost to Starbucks I realized I didn’t have my highlighters and had to run to Rite Aid!  Then on the walk back one of my co-workers who was out with his family saw me and called me in to hang out!  I was grading ahead of time anyways, so I definatly didn’t mind getting to meet the family.

While at Starbucks I drank some OJ.

And then shared A’s brownie when he came to pick me up.

When we got home we shared a meal from the pizza place, half a can of coke and 2.5 garlic knots.

And then it was off to bed!

    Ah Brussels sprouts… my sister loves them, and I am not too fond of them. LOL
