Fish and a Movie

It is obviously quite late so I will try to make this a quickie (hehe).  A and I had a good walk finish our errands.  I even took a shot of my tootsies because the fabulousness of the Chanel nail polish my mommy gave me needs to be shown.


When we got home we got down to dinner making.  My father and I have been talking about cooking fish (my parents’ new routine is fish every Sunday) and he generously offered to have A and me use his credit card to buy some.


Mahi Mahi is my favorite fish other than salmon.  We were hungry so we did things quickly.  First we did a three minute marinade,


2T mayo, juice from 1lime, and a big sprinkle of paprika.  Then A cooked it on the stove top for about 8 minutes, delish.


We also had oven roasted asparagus,


and sweet potato with Smart Balance Light.


All together.


It was a really nice meal – thanks dad!  I had a small glass of A’s beer too.



Our big after dinner plan was gelato that my girlfriends left but we had the fun discovery that our freezer had completely defrosted – woo who!  So we went to the movies instead 🙂  We saw The Hangover which 100% rocked my socks.  While we watched I had a regular sized Jr Mints (as in not movie biggie sized) that I bought at Staples today,


and 2 handfuls of caramel corn.


I like having small hands, my palm can’t physically hold more than a .5C serving.

And now it is totes time for bed – peace!


When I Dip, You Dip, We Dip

First things first – if you had the same kind of crappy eating day as me and are actually feeling crappy about it please stop over to this fabulous post a la Caitlin.

For train breakfast this morning I had an Odwalla Chewy Nut Bar (am I the only one who giggled there?  anyone?)


I am a fan of this, I like any nut-heavy (more giggles) bar.

School was interesting.  For some reason the copy room didn’t make my copies (that I put in 8am Friday!) for first period and I had to totally change up my lesson.  Next my boy’s class was completely and typically out of control.  Atypically, I made the principal come in and confiscate everyone’s cell phones and ps2s – there are now a lot of angry 8th graders.

The collection/complaining lasted through my lunch so I ended up not eating this random assortment until the end of the day.


I tried a So Delicious Coconut Milk Yogurt in Pina Colada.


I love this quote.


For fruit I had an Odwalla (I’m not sure why I had so much Odwalla today) Orange Honey Passion Juice.


And dessert was a pb candy cane from my Blue Apron spree.



I stayed late after school to redo my bulletin boards and meet with some students.  What is going to be sucky when I quit my job is that my hyper-critical administration actually likes me.  Apparently my old administrator was having a convo with the guidance counselor about how sad she was I was off the floor because I was available to the kids instead of bolting after school (I moved floors this year from 7th-8th grade) and then he came upstairs and saw me meeting with kids.  Actually, I wish they liked me less, then maybe they’d believe me that I have zero control and actually Help me!

By the time I finally got home it was after 6:30 – boo!  A was a sweetheart and met me at my train and I went to Barnes and Nobel and spent way too much $.


The third book was free!  On the walk home I ate these bbq Popchips.


Once home I had some school work to do and I decided it was absolutely necessary that I read my new issue of Health with Mariska Hargitay and Sarah Chalke!  I also snacked on A’s leftover pizza crusts.


I dipped them in Diet Dr Pepper Cherry – I always dip my pizza crusts in soda, I also dip pretzels.  What do you dip?

Later in the evening I ate this SWITP sample – a Belly Bar.


It was meh.

And much much later, too late, I decided to make dinner.  My favorite cooking method is oven roasted so that was the focus – sprayed foiled pan, chop food, baking spray and salt, 30minutes at 475* – perfection.


I did 1yam baked fries, cauliflower, and the leftover half block of tofu.


The tofu I sprinkled with this.


And I made DIP out of a lot of ketchup and a little maple syrup and Tabaso Chipotle.


And now it is fully time for bed.  Sleep tight!

Took the Cake

Happy Monday everybody!  Today was actually a really nice day of work.  My kids were well-behaved and we got more done than usual (although still not as much as I would like!).

I started my morning with an Apricot Almond KIND Bar, my fav.


A walked me to my train so I was in a big bliss cloud for most of the ride!

During lunch I was busy setting up my SmartBoard and I didn’t get a chance to eat anything 😦  We had a faculty meeting after school, but I did manage to snag my baggie of green grapes before I went to that.


After the meeting I stayed to clean up my room and call parents so I ended up not getting home until after 6:30!  I organized some things and cooked dinner while I waited for House to begin.  I ate this yogurt when I got home to make up for no lunch.


Wallabyis a brand of Australian organic yogurt.  Nonfat Strawberry Guava was pretty impressive, I love the look of the containers too.  I also ate at least two bites of A’s junk food (pizza and a cupcake).

For dinner I tried out this new preseasoned tofu from More Than Tofu, in peanut ginger.


I sliced it and baked it for 20minutes while I made a side using this stuff:


Heat over low heat in a small pan; 1can seasoned greens + 1/4C blue cheese crumbles + 1/4 unsweetened dried blueberries = Blue Blue Greens.


I ate the entire package of tofu! (360calories) 


It said that there were 4 (90cal) servings but that seemed a little skimpy to me, although half a package would work if you’re not super hungry.  I made a sauce for the side out of stir fry sauce, Chipolte Tabasco, rice vinegar, and honey pb.


Everything was hella yummy!


After House (amazing!) I headed to the gym; I’m proud of myself for making it two days in a row.  I did 15minutes on the elliptical at level 10 and 15minutes on the stepmill at level 7.  I ended with 5minutes of abs/stretching on the mats.  I had a great work out but the bonehead on the machine next to the mats would not stop grunting!  I get that you might struggle at the end of a set but if you are screaming straight through 10+minutes of weights you are doing something wrong!  Even worse was the fact that he kept yelling at himself, berating himself anytime he stopped.  I felt bad for him because it was clear he had some issues but please live out your body issues quietly 🙂

A met me for the walk home and we took a walk around the neighborhood for funsies.  I might have felt the need to go back to Tea Lounge to buy the gigantic Oreo cupcake I was drooling over earlier in the day.


I also might have scraped off all the frosting and thrown the cupcake away [carnage].


I am fully aware that a. this is wasteful and b. it pretty much undid any calories I burned at the gym, but damn it I like cupcakes!  Belly full, I’m off to take a quick shower and snuggle into bed, night!

I didn’t quite cross off my to do list – I have grading to finish in the morning and I never made it to yoga – but it’s been a busy day!

Post breakfast I worked on school work and worked and worked and worked.  I ate lunch over a couple stages – dried mangosteen and a cherry starburst,


the last of the Kashi cheddar crackers (about a serving),


and a sliced Sonya apple.


Finally I packed up my stuff and headed out to my errands.


I spent forever making copies!  Plus, a teacher at school gave me her extra overhead (YAY!) so I had to get copies onto transparencies as well!  Using some gift certificates and coupons I saved $40 at Staples today – I spend so much money there I’m up to a Platinum rewards card!

On the way home we stopped into the pizza place for a late lunch, I got a cheesy broccoli calzone.


Which I paired with a handful of baby carrots.


Amid work, I also watched “The Great Mouse Detectives,” which put a smile on my face.  (fyi: we watched “Stardust” yesterday and A and I love-love-loved it!  Highly recommend it if you haven’t seen it yet).  During the movie I ate an oooold Dr. Pepper ice pop from the back of the freezer.


After more, more, more work it was time to start dinner.  I made salad as a first course while we cooked.


This was an iceberg blend base with dried craisins, wasabi peas, and homemade dressing.  For the dressing I shook the remains of a mustard bottle with evoo, apple cider vinegar, and a pinch of sugar.


A’s was the same, but bigger, and with nuts (geez that sounds dirty!).  His and hers –


For dinner we made Marinara Chicken.  I cooked four breasts (always skinless and boneless btw), seasoned with salt, pepper, oregano, and paprika, at 375* for 45minutes.  Later they were mixed with this stuff.


I cooked 1/2 the box of ww pasta according to the directions on the box.  In the last few minutes of cookie I stirred the chopped broccoli into the water.  After straining and putting the pasta-broc. mixture back into the pot I stirred in the tomato sauce.


Finally I topped my serving with 1/2 of a sliced chicken breast and some part skim mozzarella.




I drank a virgin mojito with my dinner.


Made out of club soda and a stirrings mix.

It’s far too late, so I’ve got to split like a banana, have a good night!

Best of Intentions

Not much school work done today (I know, I know!) but I did make it to the gym!  I ran the .65miles there because I’m always late to warm up.  Then I took a 45minute Pilates class, which I adore even though I’m out of shape.  On the way out I spotted a “People: Style Watch” and convinced myself to do 15minutes on the stepmill at level 7.

When I got home I found out that friends in Williamsburg wanted us to come up for drinks so I had to take a quick shower to get dinner started in a hurry.

We had quite the spread:  Salmon Patties, Roasted Purple Cauliflower, and since you always need something fried with a burger, Oven “Fried” Okra.  The cauliflower was roasted in the usual way, and the okra recipe can be found here, but here is the recipe for the patties-

Salmon Patties, 2 servings

  • 2cans (6oz each) of boneless skinless salmon
  • 1t Old Bay Seasoning
  • 1/2 a small onion, grated
  • 1/4C Italian seasoned breadcrumbs
  • 1 egg
  1. Mush all of the ingredients together in a large bowl.  Once everything is combined form 4 patties.
  2. Cook with 1t evoo in a pan on medium high heat, time will depend on your settings

The cauliflower tasted just like the boring kind, but it looked much prettier.


And the okra was fantabulous.


I made a dipping sauce of ketchup, maple syrup, and apple cider vinegar for the side.


And I took the two smaller patties so A could have the bigger.


All together.


After dinner I was still ravenous.  I can’t understand why I’m so hungry!  I ate some Liberte Low Fat Honey Flavored Goat Cheese as dessert.


Just kidding, I don’t know why they call it cheese, it was basically just Greek yogurt.

After dinner we headed off for the long trainride to Williamsburg.  We stopped to get a to go small skim hot chocolate for the commute.

We had a great time seeing our friends, we went to a couple of cute bars in the area; I really love Williamsburg.  Plus, for some reason we all decided it’d be good to walk the 20+ blocks to the 1st bar instead of renting a car, so I got to treck!  I had, unphotographed, a glass of red wine at our friend’s apartment and a Red Stripe at one of the bars.

On the way back to the Slope (much too late!) A had to pee so badly he made us get off the subway!  While we were out we ended up getting YUMMY pizza.


Tired and stuffed, we fell into bed without even setting alarms which is why my post for Sunday will be rushed this evening! 🙂

I’m Too Tired to be Clever

It’s been a busy, busy, busy day!  This will be a quick post because I am still not quite ready for bed!  After my Larabar ode it was time for breakfast.  A cup of eggnog’n tea.


1/3C of oats, topped with 1t butterscotch chips, a heaping tspoon PBCo chunky pb, and Kefir lowfat cappuccino.


I did not like Kefir on oats, this will not be an addition you will see again!

For lunch I made a savory pb&j.


A mini ww bagel with PBCo spicy pb, homemade strawberry jam, and 3slices of chicken.


Alongside my last clementine.


All together.


Later on for a snack I ate 3T of paperbag popcorn (also my favorite Fiona Apple song).


I also nibbled on 3 of these throughout the day.


We did not realize that they were 70calories per cookie, excuse me Oreo, size matters.  You are not big enough to pack such a caloric punch, even if you are yummy!



We made 2.5servings of ww pasta, cooked with 1 big head of chopped broccoli.  After draining, toss with sauce – 2T tahini, 1T lemon juice, 1T apple cider vinegar.  Top with a block of tofu that has been sliced and sauteed.  This makes 2.5 yummy servings.


Today has been pretty much all schoolwork, the only time I left the house was to sprint to Staples to get copies 😦  I’ll be blogging more tomorrow about why today was so ridiculous!  On my list of accomplishments, however, was making 10research folders stocked for an upcoming project,


and making a prize bag for the student in each class with the highest average (my new thing this quarter will be annoncing the top and bottom of the class every Monday).
