Rock Star

The day is done and I am a Rock Star!  I am 100% + done with school for this week.

This morning I worked straight through breakfast but around 1 I prepared lunch for A and I.  We bought this Arnold Everything Rye bread on Thursday so we knew we wanted sandwiches.


Tuna salad!  We use a little bit of mayo and a LOT of pickle relish in our tuna salad.


I sprinkled hot paprika on my portion, I had about 1/2 a can (since A ate 1.5cans!)


{More his/hers} I added salt and pepper and cheddar cheese to the bowl after I took my portion out.


I ate my sandwich along with a sliced plum and some Dirty Salt and Vinegar chips.


All together.


I did morework and a little later I made this split-tastic bowl.


A sliced banana, a sugar free banana fudge pudding, 1 crunched double stuff oreo, and a few cinnamon brown sugar almonds.

.more work.

When I was 80% of the way done I went to the gym.  I did 35minutes on the treadmill – 1minutes walking/2minutes jogging for 3.4miles.  Then I did 5minutes of abs and stretching on the mat and 5minutes of arms on the machines.  In spite of being a total fat ass for the last 6months we discovered I can now do 40lbs on some of the arm machines – more rock starness!

After the gym I walked to Staples to do work and to Union Market to buy fruit and a surprise for A, I also bought this Naked Gold Machine Juice for the walk.


Then home, and then to Starbucks to do my final piece of work.


I ordered a tall nonfat iced latte so I wouldn’t feel bad sitting at a bench but A came down a bit later and drank 90% of it.  I made grade reports for all of my students that show every assignment so far this semester and the grades they earned on them.  I have high hopes that kids do make-up in the next 2weeks but it looks like I will be failing a lot students my FINAL QUARTER of teaching.

Once done I came home and made a late lame/awesome dinner.


This was Tofu -Deveganized!  I drained and pressed a block of extra-firm tofu then cut it in half.  Then I cut a hole in the side of the block, careful not to cut through to the other side.  In the hole I stuffed turkey pepperoni and reduced fat mozzarella cheese.  I covered the hole with a small slice of tofu, rolled the block in egg and breadcrumbs, and fried in .5t evoo.




On the side sauteed A and I some frozen broccoli rabe with wasabi sesame seeds and then added in the leftover dipping egg for the last few minutes of cooking.


It was inedible – the frozen rabe was cheap and it was all bitter bitter stems.  This dish was more bitter than a fat wife whose ex-husband just married an 18year old.  My other failure was the Stonewall Kitchen Wasabi Mustard I tried to use as a dipping sauce, also terrible.  But the tofu?


Fabulous.  I would, however, recommend baking at 450* for 30minutes instead of frying, I was pressed for time.

I tried a few sips of A’s beer but ended up going with a diet Dr Pepper cherry.


I totally had to have dessert. Turkey Hill Mint Choco Chip ice-cream with 2 double stuffs crunched over the top.


Mint chip is a favorite of mine but this might be the best kind I’ve ever had, go Turkey Hill!

A and I have super fun plans to celebrate a work free day tomorrow, I can’t wait!  Sweet dreams all.  I will end with some bonus questions –

Shout Outs All About

Hello again!  I know it’s silly to do a block post when I am on a day off but I was experiencing blogger burn out after my megapost earlier today.

I will start with some Shout Outs:

A)  My amazing, awesome, fantastic friend Ian, who is far cooler than I’ll ever be, made a music website you should check out –

Onto the food.  While doing my online duties I munched on 1C of Kashi Heart to Heart Blueberry with some Nonfat Plain Kefir.


Delish!  I enjoyed eating it, but when I was done the dirty bowl smelled so good I had to take it away because it was making me hungry again!  I had found the flavored Kefir to be a little sour for my tastes but this was perfect.


One post and hours later it was time for lunch.  I made Cambell’s Select Harvest soup as my main dish.


Alongside a microwave quesadilla of 2oz of smoked gouda in a whole wheat tortilla.


I know it’s kind of gross, but I love how bread products get chewy when you microwave them.  I also finished off the last of the grapes.

Later on I headed up to Manhattan for the 10billionth doctor’s appointment to deal with my plantars wort 😦  Before I headed home I bought a 130calorie hummus and cucumber pack from Au Bon Pain.


Back in the Slope, I finally got in a workout!  This week I have to get myself back into the habit.  I did 25minutes on the eliptical on a resistance of 7.  I ended up going 2.75miles.  I also did 5minutes of abs/stretching at the end.  I can’t help but think that my 25minute Gym Playlist on my new i-pod helped to keep me going –

I ran some errands after the gym and then came home to more tasks online.  While I was working A made a big batch of (slice and bake) chocolate chip cookies.

For dinner we cooked this Annie’s,


and added in 10oz of peas near the end of cooking,


and stirred in 2 cans of tuna.


A and I split this (3/5 and 2/5)  for a yummy, protein packed meal.



A is watching “Robin Hood Men in Tights,” and I will most likely have another cookie when I join him!  I’ve got a beyond packed day tomorrow, see you then.

Cous Cous Gobble Gobble

The title is the childish moniker which I dubbed our dinner, but first, a clue to how I’m feeling.  This was my most exciting purchase of the week:


I feel pretty awful.  It is fabulous timing for a short week!  For breakfast I packed a pumpkin bar to much on the train.


I did a preliminary activity with the RAN (procedure I went to the pd for last week) today.  The RAN – researching and analyzing nonfiction – is a technique to organize your notes and thoughts about a topic.  For our whole class practice we did sharks.  The pictures show the basic idea, but please feel free to ask for more explanation.










And for lunch I finally brought in my last tuna to go packet.


By the time I got home after afterschool I was so hungry a pumpkin bar made it to my mouth way too fast to photograph!  I also snacked on some tropical fruits.

For dinner we used this cous cous as our base,


to make this huge pot of yumminess.


We cooked the cous cous, cooked 16oz of turkey sausage seperatly, then mixed the two together with 2T of Smart Balance.  Simplist meal ever, and the added bonus of a silly name – Cous Cous Gobble Gobble!  Here’s my portion.


I will probably have some of my eggnog’n tea later.  Today was pretty stressful, so I’m watching some TV and heading to bed early, my grading can be done tommorw.  I hope everyone else has an easy, relaxing evening!

It All Evens Out

Post title comes from the ironic zen-ness to my day.  Going on my trip made this week a living hell, but going on my trip also made me beyond happy and thrilled, so it all kind of evens out.  Similar sitch (adore that word) with my meals.

I ran out the door without breakfast and ended up stress-eating 5 fun sized candy bars from my desk (no pic, bag was too heavy for a camera).  Clearly on the lower end of healthy breakfasts, but my veggierific lunch evened things out!

Baby carrots with a Tbsp of blue cheese dressing and a Odwalla Pumpkin Smoothie!  (my celery had become more chewy then crunchy – gross!).  Lunch was yummy and put a smile on my face, but could have been more filling.

I grabbed dinner the minute I got home at 6pm.

I doctored up our leftovers with the rest of our pine nuts, a dash of salt, a tsp of evoo, and a liberal sprinkle of red pepper flakes.

A slightly more grown up version of the original dish.  I imagine when I have kids they’ll be served dish 1 and A and I will eat dish 2; I don’t ever picture myself making 2 meals a night.  If you are feeding your kids a healthy diet (and you are keeping a healthy diet) there’s no reason the two shouldn’t be able to converge.

I’m still a bit hungry, and know I’ll be up late, so I’m having on having a snack later.  Everyone have a productive evening!

Back with a Bang!

I’m back!  I had a ridiculously fun weekend away in Miami, but more on that later on….

I was super neverous to have not done plans for the week, and actually ended up waking up at 3:30! in the morning.  I just couldn’t go back to sleep so at 4am I rolled out of bed and got to work.  I ate a bowl of Kashi (2/3C Go Lean and 1/3C Crunch) with skim milk while I worked.

I got a lot done, but I will still be pretty slammed this whole week!

For lunch I packed a deconstructed pb & j (actually ab- almond butter!).  I had Mary’s Gone Crackers, celery, and a go pack of AB,

with apple slices and some triple berry preserves.  The Chiobani exploded in transit so I didn’t eat any yogurt.

I stayed late after school for tutoring (and lots of parent phone calls 😦 ) so I snacked on a Cliff Blueberry Crisp bar while I worked.

When I got home I shared one of A’s Pita Pan falafels,

and made up for my missing lunchtime yogurt with this combo:

I crumbled the Nutragrain bar ontop of the yogurt, almost like a crisp (just like my Cliff bar, I guess I was in a ‘eat like the weather’ mood today!).

A and I trecked to Staples and the drugstore, to make some copies among other things, and with my hurting foot the 2ish mile walk took up a good portion of time!  We def. enjoyed getting some couple quality time after a weekend away though, I LOVE to walk with A!

When we finally got home we made the quickest, easiest dinner ever!  These ingredients were all it took for tonight’s dinner (and tomorrow’s leftovers).

I also ate another sliced apple for dessert.

The thing is a blob of whipped cream cheese with cinnamon.

I have a teensy bit more to do before I hit the hay, I’ve got an early morning of school work.  I will do a quick recap of some of the fun stuff though!

***Weekend in the MIA – was fabulous!  I got to spend some good quality time with some of my best friends from college and actually managed to see almost everyone who was important to me!  The sun was hiding, but the is plenty to do beyond the beach!  (My camera was being screwy so the following is a pretty random assortment of pictures)

For one get bubble tea (wiki it if necessary, ah-mazing!) from the place near my old apartment I was Obsessed with!

When we went back again 2 days later we had to take a 2nd sign pic!  My girlfriends used to tell me how gross this looked in college but I think I’ve finally got them hooked.

The on campus bar/restaurant I worked at all four years of college is relocating and temporarily closing, so we had to make a stop in on alumni night.

I had the fantabulous buffalo chicken sandwhich for the last time ever (or at least for a while) along with a few too many beers!

I even got an employee’s only shirt from my former (and favorite) boss!

We also saw N.E.R.D on the green at UM!

We didn’t get home before 3am any night I was there, which is why I look a little haggard in this pic of us at Bongos, a Cuban restraunt in South Beach.

All in all it was FANTABULOUS!  I saw some of my favorite people, got to walk around my old university, hit up some of the fabulously dirty grove bars!  I even got to go to the C-Store (anyone who was friends with me in college was graced with at least 1 hour long trip to the campus conveinience store while I wandered about overwhelmed!)!

With 2.5hours of sleep I thought sugar would be the only way to make it through the day, but I’m actually doing pretty well.  I’ve been in work mode since I woke up which is probably helping – I didn’t even eat breakfast because I was so busy on the train!

I had a tuna packet for lunch, but I’ve decided not to buy these any more (sorry for the lack of photo).  They are delicious, and I plan on eating the one in my pantry, but the cracker to tuna ratio is too low and I end up throwing away at least 1/4 of the tuna (and being hungry!).

I also packed this arsenal of healthy sugar rushes today that I snacked on throughout the day.

I shared the fruit leather with some of my students, they were unimpressed.  Nutrition is not a focus in this neighborhood, most of them eat Sour Patch Kids and Doritos for breakfast.  I always try to share healthy things with them and bit by bit they are surprised by what they like.  Unfortunately boysenberry fruit leather from Trader Joe’s was dubbed “flat raisins,” so I wouldn’t say it was a huge it.  I also split the Kashi bar with a coworker during our faculty meeting after school (the chocolate, I kept all to myself!).

I stayed at school finishing up work until it was time to head into the city.  A and I met beforehand and shared this vegetarian wrap (only my half is shown).

With shredded carrot, avocado and chipolte sauce I was in love, but the whole thing was less than 200calories, so understandably A’s stomach was still growling.

I snacked on an apricot and almond Kind bar while at the doctor’s.

I would say this is my favorite thing I’ve eaten this month.  Flavor, texture, everything is perfect.  And apricot and almond are one of the ‘superfood’ pairs that you are supposed to eat together.  Kind bars have the same ideology as Lara bars, but I’d say they are 5,000% more enjoyable.

It’s 9:27 and it’s possible that A will maul me if I don’t start cooking dinner, so I’m off for now.

What a wonderful Friday!  If I was at a different school I’m not going to say I would be excited about behavior, but today felt like a good day!

For lunch I packed a CokeZero with a tuna/crackers packet.

This flavor (Spicy Thai Chili) is definitely my favorite thus far.  I feel like it hit my tongue in all the right places.  Unfortunately I ran around most of lunch and didn’t have time to eat all of it (I hate wasting food, and it seems as a teacher you do a lot of that).

On the way home (in a car due to the rain, thank you mr. c) I stopped and got this tea.

White tea with strawberries (and cane sugar).  I love strawberry tea (especially the shaken kind from bubble tea places – so I enjoyed this.  80calories per serving (2 per bottle) so I gave the second half to A when I got home.

It’s a pretty work-packed weekend, begining with some chores tonight (groceries and laundry among other things), so I’m off.  We are not sure right now whether we’ll cook dinner or eat out, so I’ll have to see.
